INGREDIENTS
· 1 cup dried red lentils
· 2 cups water
· 3 tbsp tahini paste
· 2 garlic cloves
· juice from 1 lime
· 4 tbsp cold pressed olive oil
· 1 tsp himalayan salt
· 2 tsp smoked paprika
· 1/3 tsp freshly ground black pepper
· pinch of mustard powder (optional)
INSTRUCTIONS
1. Soak lentils for two to four hours to remove lectins.
2. Bring water to boil. Add the lentils and simmer for about 10 to 15 minutes.
3. Place all ingredients (including cooked lentils) in the bowl of a food processor and pulse until smooth.
4. Spoon the hummus into a bowl.
